Nuevas oportunidades con residuos agroindustriales tropicales

Abstract

Por su posición geográfica tropical y su desarrollo económico, Costa Rica tiene cultivos que ocupan grandes extensiones de terreno, cuyo fruto se dirige fundamentalmente al mercado internacional y que a la vez generan grandes cantidades de residuos. La piña (Ananas comosus) es producida por pequeños productores pero el mayor volumen es producido por grandes compañías transnacionales. Este cultivo y el procesamiento producen problemas ambientales y no se han establecido otras actividades para aprovechar los residuos y dar mayor valor agregado. Estos residuos se pueden constituir en materia prima para la producción de alimentos funcionales además de otros usos y hace falta despertar el interés y realizar estudios de factibilidad que muestren la viabilidad de este tipo de actividades. Se presenta la situación de la generación de residuos y lo que se están haciendo las empresas, además de dar señalar las cantidades que podrían estar disponibles.

By its tropical geographic position and its economic development, Costa Rica has crops that occupy great land extensions, whose fruit goes fundamentally to the international market and which simultaneously generate great amounts of remainders. The pineapple (Pineapples comosus) is produced by small producers but the greater volume is produced by great transnational companies. This crop and the processing produces environmental problems and other activities have not settled down to take advantage of the remainders and to give greater added value. These remainders can be constituted in raw material for the functional food production in addition to other uses and it is necessary to wake up the interest and to make feasibility studies that show the viability of this type of activities. The study indicates what the companies are doing and the amounts that could be available.
